Persian Evening with Simi Rezai

Persian food is a something of a mystery to most in the West, yet it is perhaps the oldest culinary tradition of all. In this evening course, Simi Rezai, an Iranian from the Azerbaijan region of Iran and experienced cook and teacher, introduces us to the joys of Persian cuisine.
During this evening workshop, you will learn how to prepare authentic and representative dishes of Persia :
• Osh – a herb broth with pulses, which is the most Persian of dishes as the kitchen osh-paz-khaneh is osh cooking house!
•Lavash – An unleavened flatbread
•Baghali Polow – steamed saffron rice layered with spring broad beans and dill
•Morabayeh Zereshk – The people of Azerbaijan don’t eat a pudding, rather, they have a teaspoon of jam with chai. Simi will show us how to make delicious, quick and versatile barberry jam.
The course is a mix of demonstration and hands on. We will finish with a Persian supper with organic wines.
Simi Rezai is an Iranian from the Azerbaijan region of Iran (in the North West) who lives in Bath. She visits her family in Iran regularly and is able to come back with new ingredients and ideas for her classes. She is an experienced teacher and has a passion for exchanging food knowledge and particularly teaching the authentic food of Iran.
